Ingredients
1/2- 2 pounds pork tenderloin
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. garlic powder
1/2 tsp. ground cumin
1/2 tsp. dried mustard
1/4 cup butter
2 large onions (quartered and sliced into ½ inch segments)
4 large granny smith apples (peeled and cut into 1/8ths)
1 tbsp. brown sugar
2 tbsp. parsley (chopped)

Mix salt, cinnamon, garlic powder, cumin, and dried mustard together and rub over the surface of the pork tenderloin.

Heat butter in a large skillet over medium-high heat and sear the pork tenderloin on all sides to seal in the juices.

Sauté onions in the skillet for 2-3 minutes to soften.

Cover the bottom of a large 6-quart crock pot with apple wedges and sprinkle with brown sugar.

Add sautéed onions and sprinkle with salt to the crock pot.

Lay the seared pork loin over the top and cook on low for 6-8 hours or high for 2-4 hours.

Cut the tenderloin into slices and place on a platter, surrounded by the apples and onions, and sprinkle with parsley.
